At the Dietitians Australia 2021 virtual conference, Nicole participated in a hypothetical panel addressing the question, what will we be eating in 2050? She played the role of CEO of the Food Sector Council of Australia and spoke of the challenges of climate change and environmental degradation and how the food sector could feed 9 million people by 2050. She spoke of the importance of technology to help solve problems but also the role Indigenous knowledges to teach us how to live in harmony with the land and the importance of enhancing food literacy in the community. And she predicts we’ll be eating more plant foods, algae, fungi and insects in 2050!
